Despite living on Lake Ontario, Long Island, and now in Florida, I have never much cared for fish...ESPECIALLY handling them. (Watching "Finding Nemo" was a stretch for me. But I built a bridge and "got over it" with the help of an amused but understanding butcher who deveined the shrimp for me, and courageously made this awesome shrimp. Thank you, Paula. I can now tear up my "Phish Phobia Anonomous" card.

Tried to serve this to a real Jamiacan -- and she ate it with good humor, but skipped dessert. Nothing like this is served outside the Southern U.S. (Copeland's restaurant started it, where the definition good food nowadays is either treacly sweet or Habanero hot. No all us Southerners are getting overweight. I prefer Paula's authentic low-country recipes.

My Son in Law loves the yukky frozen already made coconut shrimp but hates the sight of raw shrimp. One day when he wasn't around I peeled and cleaned the shrimp and disposed of the evidence in a plastic bag in my neighbor's garbage. I made Paula's recipe and he loved it so much that I am now allowed to cook it in his presence. Thanks Paula.
