This dish was simple to prepare and very tasty. Note the proportions appear to be off. I used large shrimp & the bread crumb mixture (I used panko was about double what I needed (as was the flour. I used one tablespoon of spiced rum [captain morgan's] in the marmelade. If you are a sauce lover like me, I would say to double the amount of the sauce so you have lots of orange marmelade bits to pick up with the shrimp!

This is the best coconut shrimp I have EVER had. Better than any resturant and Ive had it at many locations. I made a orange/jalapeno jelly to go with it and was killer. This was so simple I couldnt believe it. Thanks so much, my family and I will enjoy this many years to come!!!

This recipe is easy and delicious! Better than any coconut shrimp I've had at 5 STAR restaurants. My kids and husband had one comment, make more next time.

My bf and I loved this recipe. I'm allergic to shellfish, but I couldn't help having a small bite. It was delicious. It was a big hit with my sweetie, and it was easy to make and not time consuming. Thank you Paula. You're the best!!!!

My husband came back from a long deployment with his ship anf some and his ships mates where hankering for a home cooked meal so meand some of the other wives got together and each made 2 dishes for our group dinner..This was the talk of the night along with the souther fried chicken and pecan glaze..everybody wanted the recipe and now my friends husband wants it every week..Thanx Paula.. this Jersey girl found her southern roots again.. lol

I loved this and so did my husband! I just couldn't believe my 3 year old liked it or even tried it because she is so picky! I did add some panko breadcrumbs to the mix and a little Old Bay seasoning. I also had some bay scallops left over in the freezer so I made them along with the shrimp and they were also very good!

Everyone I know loves this dish. We make it every new years eve party and it is always a hit. I have friends that ask for me to make it since they love it soo much. My only issue is you spend all night in the kitchen breading and frying the shrimp. I will start using frozen coconut shrimp instead to save on the time spend in the kitchen.

My whole family loved this shrimp, including my 5 and 8 year old. My husband thought it was definitely as good as we have had in restaurants. I used the orange marmalade but mixed it with pineapple juice instead of rum and it turned out great.

Made this recipe last night with friends and it was wonderful. We loved it!! It did make WAY too much coating, so next time I will probably just make about a fourth of the coating, b/c I threw half of it away. Didn't make the dipping sauce. We dipped ours in a raspberry dipping sauce and a different orange marmalade sauce that we made to go with our hush puppy recipe we got from Down Home w/ the Neelys. I love the Food Newtork!! Can't wait to make this again! Thanks Paula!!
