We love this stoup. Quick and easy. My family likes the sandwiches as well, but the soup is the #1 winner of this pair for my young boys and husband!

this was my first time making black bean soup and not only did i love it, but my parents, their guest and my husband loved it - and he doesn't even like black bean soup! didn't make the monte cristo sandwiches this time but i will next time - i served it with fresh tortilla chips from our local burrito place and some cheddar cheese. brought me right back to the black bean soup i had on the beach in belize for our honeymoon!

Excellent recipe and a great starting point for similar dishes. I tend to spice up the soup and eggs a little bit because I enjoy my food fiery.

Another good recipe- if you don't like spicy, you may want to steer clear but we loved it- and I have enough for leftovers:

We've been making this soup for years! Definite keeper. We just do pepper jack grilled cheese sandwiches if we even bother with a side.
Sooo good!

Excellent Stoup! Made exactly as recipe written except I let it simmer for a much longer time. Very flavorful. Nice and spicy. I used Tapatio Salsa Picante Hot Sauce (all 3 Tablespoons so we appreciated the coolness of the sour cream topping. Served with Artisan Asiago Cheese bread and fresh fruit. A great meatless dinner. Will make again for sure!

This soup was so blah until I added a jar of peach salsa. It was fabulous!!! (and a teaspoon of sugar always to everything. You will love it. I also added a can of border blend yellow corn. I added about a cup and a half of chicken broth. Just add the peach salsa and I guarantee that you will love it!
