Reallly good. Tasted a bit funny at first, but flavors melded after sitting in frig about 1/2 hr. Will try with kosher salt & a bit of lime next time, just cuz I saw it in another recipe.

Very tasty & refreshing! I did add some kosher salt, since my Dad has always put salt on cantalope, I know sounds weird but it works! I will be making this again.

The only reason I have to give this recipe 4 stars instead of five is because I was forced to substitute dried peppermint for fresh mint leaves (don't try this at home Not the best decision I ever made but I can see how these flavors really work together. I also added a little lemon which was pretty nice, I must say.

I make this recipe often... I actually add some salty prosciutto to complement the sweetness of the cantaloupe. And I also drizzle about a tablesppon or so of lemon juice! It's wonderful and everyone digs in for this salad! Great and easy!

This is an easy but versatile recipe. You can use almost any type of fresh fruit. I have use peaches and blueberries, melons, strawberries and melons etc.

Although my cantaloupe was less than ripe, this was a hit. The ginger and honey were a great combo. Did not try with the mint. I suggest heating the honey in the microwave first for easiest drizzling.

My mother and I tried this recipe after recently seeing it prepared on Dave Lieberman's show. It was the most wonderful, refreshing combination of flavors--the sweetness of the cantaloupe and honey, the spiciness of the fresh ginger, all topped off by the fresh mint. We absolutely loved it and will definitely make it again (and again!. Thank you for such a simple, flavorful recipe!
