    We LOVED this recipe! Each bite was so flavorful yet not so much that you got sick of it after a while. I could only find the 10oz box of couscous so I increased some of the other ingredients (oil, lemon, orange, curry, sugar and salt. I left the nuts, cranberries, chives, and parsley pretty much how the recipe called for and it was the perfect amount. I will make this salad over and over again because it is delicious, easy, and the ingredients are cheap!

    Similar to my version, but I only put curry, chick stock, and butter in the cooking water. Then it is dressed with olive and canola oil, lemon juice, honey, s&p. Add scallions, toasted pine nuts (way better than walnuts IMHO garbanzos, dried cranberries, and parsley. MUST be eaten at room temp. This is so good I swear I make it twice a month, especially in the summer.

    Yummy, I took this to a potluck and for the most part it got missed, but I was so glad to take it home. Tons of flavor! Tastes like a professional made it, I have got to find more recipes with curry powder!

    My parents went on their semi annual trip up to Penzeys and brought me back a couple of curry blends. I used the Maharaha blend for this salad and it was YUMMY! A weird combo I have to admit but so tasty. I can't wait to have the leftovers for lunch.

    This is such a tasty dish! The dried cranberries and fresh parsley really give a punch of flavor! Love it!!!

    I made this salad yesterday for a family reunion and it was great. i did not add the scallions, because i am not a fan of onions, how every i did add some feta cheese and it was great. I also used Slivered almonds instead of walnuts.

    I've made this many times and every where I bring it, it's a hit. It is easy to make and healthy and always comes out the same. It's a great side for chicken or beef and makes a great substitue for macaroni or potato salad at a picnic.
