I've made these twice now and they are amazing! This last time I used 93% FF ground beef instead of turkey - my husband and I liked it better. Instead of frozen spinach, I cooked down a container I had of fresh and chopped it up. I used about 1/4 c. almond meal and 1/4 c. ground crackers instead of breadcrumbs. I baked for 25 minutes to make sure they were well done. I look forward to having leftover spinach now!

YUMMO!!! Absolutely delicious, and easy to make. I prepared the meatballs the night before and roasted right before dinner. The cheese sauce is also really delicious, but frankly, the meatballs are so good on their own that they really don't even need the sauce! My kids both loved them, also!

I usually don't write reviews but these florentine meatballs turned out excellent! I didn't have any whole milk so I used 1/4 c of heavy whipping cream for the meatball mixture and 1 1/2 c combo of heavy whipping cream and my husbands lactose free milk for the sauce. I also didn't have spinach so I just left that ingredient out. The meatballs turned out so delicious that I'll just use heavy cream every time I make them!

These meatballs are fantastic! My husband prefers tomato sauce, so I have never made the Rachel Ray sauce that goes with it, but the meatballs alone are great. I like to make extra and make meatball heroes later in the week.

Absolutely delicious !!! Kinda resembled Malfatti but WAY easier to make and with lots more protein. I used fresh baby spinach, chopped finely in food processor. This recipe is PERFECT. Thanks Rachel !!!

I love these! I did use some thyme and basil also. And I substituted sour cream for the milk and gluten free bread crumbs for bread. Also used fresh spinach. They are Killer! Not sure of the sauce for them yet, in the freezer for a later date. Thanks Rachel, Karen Redelin, Sturgeon Bay, Wisconsin

I was looking for another way to use ground turkey and saw Rachel's recipe for Florentine Meatballs. The only change I made was that I used fresh spinach that I had on hand instead of frozen. The meatballs were moist and delicious and the cheese sauce was perfect. Thank you Rachel for another winner!

This recipe is fabulous! It's easy to prepare and with the cheese sauce it's unlike anything you can find in a restaurant. The meatballs are delicious alone, or in a red gravy, but the cheese sauce is so rich and tasty, no pasta required.
