Love this version of pot pie, make it every winter. It has sev'l steps yes, but if you do it in stages when you have the time, it is a very easy recipe to do. You can saute the veggies first, create the roux and chicken mixture next, and the next day assemble it. No muss no fuss. If the gravy thickens overnight in fridge, add a touch more broth and it's fixed. That way the day you want to eat it, you are not frazzled. I love make-ahead meals like this, good for a brunch or dinner. I use pie crusts or puff pastry for the topping, whatever I have on hand. I use white button mushrooms instead of the large portobellos; I find the portobellos give a 'gray' cast to the gravy. Not a lover of peas, I put in corn kernels instead. Other than tweaking that, the recipe is 100% as is.

So good! I'm not a fan of mushrooms or celery, so I left those out. This seems like the perfect comfort food for a wintry afternoon :

This was a very tasty pot pie. The whole family enjoyed it and using the puff pastry made it melt in you mouth good.

To quote my husband, "This is the best chicken pot pie I have ever eaten." Even though there are steps to this recipe - it is worth every moment. The final results were just delicious. I only have one question - can it be frozen? There are just the two of us and six are a bit much. But, will make it again and again! Thanks.

I am not a fan of mushrooms so I left those out, and I also had some white wine on hand so I used half chicken stock and half white wine. It was delicious!!! Instead of using puff pastry, I also used Ina Garden's recipe for home made pastry...it was delicious! I will definitely be combining both recipes and making this again!

We used a roasted chicken from Costco and omitted the pearl onions and added some green beans. So good!

I used left over turkey and homemade turkey stock, and skipped the big mushrooms in favor of finely chopped button mushrooms and it came out fantastic!

I used cream instead of half and half, also cut a few extra potatoes, turned out great.
