I have made her pudding before but not this version and I can't wait to do so. The Vanilla was wonderful when I made it and I put the rum it that one as she suggested.
This time I'm not going to put alcohol but I am going to make this tomorrow.

Your all giving so many different reviews that I simply must make it for myself now.

I followed Giada's recipe step by step, I even watched the way she made it 5 times rewinding and pausing to be able to replicate it but unfortunately I have just completely wasted my arborio rice, vanilla bean etc and most of all the time I spent cooking it. It was too rich but I expected that but what I didnt expect is when I chilled it, it turns rock hard. Maybe it was me but be careful trying this recipe. Seems simple but can be quite a challege. Enjoy cooking.

If you simmer it enough at medium-low, it will get very thick. Just be patient.
One comment, if you are watching your diet: I did put less sugar and it still was enough. Also, I put less than a handfull of chocolate chips (and I have a small hand : And again, the chocolate taste is more than delicious. I Think that it works very well if you just put more cocoa and skip the chocolate chips, especially if you are a lover of the pure taste of cocoa. I also used dark chocolate chips, as I like them better.
All, in all, a very tasty desert.

I have made Giada's Rice Pudding with Rum and that is excellent too! I always make the mistake of adding more rice than called for as it is just amazing that it can get so thick, I never think it will but am always surprized! FYI Williams-Sonoma sells a vanilla paste that has vanilla seeds in it that one can use instead of a vanilla bean. Thank you to everyone who posts reviews, they sure help me!

Yes, I did say Vanilla. This is an wonderful recipe for vanilla and chocolate lovers. Follow the recipe exactly, up until you get to the chocolate part for an amazing vanilla rice pudding. We used tangelo zest instead of orange, it was lovely. Also with Trader Joe's Arborio rice and whole milk, we cooked it just 10 mins. more then the recipe and it came out perfect.
For all the chocolate lovers out there like me, use less sugar but keep the same amount of chocolate (semi sweet and I think you'll be more than happy.

This recipe is easy and delicious. Tasted great before I added the chocolate and after adding the chocolate. I added about 1/2 cup of chips, I think it's rich enough with only that much rather than the full cup the recipe calls for. I didn't have an orange on-hand so I used lemon zest and it's to die-for. Must try!

I made this recipe for a little dinner pary and it was great with one exception, the chocolate was over whelming. So I made it again without the chocolate and it was fantastic. The vanilla bean is super expensive but so so tasty. I also tried it with a little bit of lemon zest not to much just a few shavings and I loved it. The lemon added a little surprise . Now if I can pull it off the stove before it gets too thick I will be in great shape. For anyone having difficulty getting it thick you have to let it cook longer than 35-40 minutes it more like an hour the longer you let it cook the thicker it get but remember to stir it or it will begin to stick to the bottom...Happy cooking

I have never had rice pudding before and am not an big orange and chocolate fan. But my husband is so I made this just as is except for the Orange Liquor cause we don't drink or cook with liquor at all. I just finished making this and my 3 year old daughter has already eaten about 1/2 cup of it. I ate about a 1/4 of a cup while waiting for it to cool. Can't wait to taste it cold. Mine was so thick I think I should have pulled it off the stove sooner so I will work on that problem next time. Highly recommend.
