These bars are easy to make and taste fabulous. I will never buy another store bought protein bar again.

I change up the recipe with variations in the dried fruits(dried apples, pears, peaches, figs, mango, papaya, pineapple, blueberries, and even walnuts. In addition, I substitute rice bran for the oat bran and substitute natural almond butter for the natural peanut butter(due to allergies. Another variation is to use natural, unfiltered spiced cider.

Very moist and lots of flavor, even after frozen for a week and thawed.

I just made this recipe and it was fantastic!! I read the other reviews and it seemed to me that the biggest problem was not having them be too gewy. Solution to that problem- stick exactly to the ingredients. We went to a health food store for all the ingredients and got the natural fresh peanut buter, rather then using something like jiff, and made sure that we had dark brown sugar (for taste rather then golden (regular brown sugar=less molases. They didn't turn out gewy at all. Mine are almost like a dense cake! Next time I am going to try almonds, and double up on the cherries!!

Thank you Elton, these bars are better than you can buy at the store. I will make a couple of changes the next time. I will add in some cinnamon and nutmeg like one user suggested. I also think I will use some steel-cut oats like another user, to get a different and better texture. I did add about a tbsp or two of Coconut Oil to add in a little moisture into the finished product. It worked great. Thanks again!!

My husband used to eat Clif bars everyday for breakfast. I made this recipe after seeing the recipe featured on "Good Eats". I was able to find all the ingredients at our local food co-op. I used dried cranberries & apricots instead of the 4 fruits Alton suggested since they were much cheaper. I wrapped each bar individually in cling wrap and put them in the freezer. They still taste good after 3 weeks of being frozen and they unfreeze within about 15 - 20 minutes. I have been eating these when I need a quick breakfast and they are filling! My husband also loves them. I may add some oats or chopped nuts to make them a little closer to a Clif bar. These would be great for a backpacking trip.

Shortly after I started making these I could tell things were headed for a disaster. My tofu would not mix smoothly into a batter as did Alton's, and it certainly would not mix with the juice or peanut butter. It was all very lumpy like rocky cheese curds, and overall looked like something not fit to feed the dog, but I figured I'd throw it in the oven anyway, what did I have to lose. 30 minutes later they came out, looking lumpy and terrible, and I debated if I should throw them out to the raccoons, but decided against punishing those poor creatures. Later I cut the bars and tasted..... HEAVENLY! I couldn't stop eating them. I ate the whole pan in one night. They were gooey and chewy just like home-made brownies. Just goes to show you can't judge by looks. Maybe next time I'll put tofu in blender to make it smoother, who knows if that'll work or not. Can't wait to make these again.

Ok... I LOVE store bought protein bars and was really excited to make these. I like tofu too, but the flavor of it came out SO strong in these bars it made me grossed out. I even added 2 teaspoons cinnamon to help add some flavor as other reviewers said to do. If it wasn't for the tofu taste they might be ok. I won't make these again even though I usually like Alton Brown's recipes :(

This very easy recipe produces a surprising quantity. I doubt most people have ALL of the ingredients on hand, but none are esoteric. Could be fun to make with children.

We have been protein bar afficianados for about 1 1/2 years now. It is the food of choice before and after a run or workout. Being fans of Alton Brown we were excited to try out this recipe but were ultinately dissapointed. The ingredients were not cheap, especially the protein powder and the dried fruit. Our batch turned out to be about .60 cents per bar, which is cheaper but doesn't make up for the hassle factor of buying and making the bars (although they weren't complicated to make. If they would have tasted awesome even that wouldn't have been such a big deal, but we found that once the dried fruit was cooked into the bars they became mushy and not the chewy texture we prefer. The surrounding bar had just a so-so texture, again a little too mushy. The flavor was OK. We are planning to stick to our old favorites.

For me, these are just ok. They're handy for on-the-go, and they're definetely a good alternative for avioding those chemical & preservative packed commercial bars. I found that I liked the uncooked batter better than the finished bars. I could go for more peanut butter flavor after they're baked. They just kind of taste like they're missing something :-S.
