    I saw Rachel do this on TV and thought it looked great. I was making steak this weekend on the grill and knew I'd have leftovers. I made this tonight with the left overs.

    The left over steak (1 1/2 NY strip 2" thick originally cooked rare worked wonderfully. I loved the add in of lime & hot sauce at the end. I couldn't believe how tender the steak still was.

    Rachel is really a very talented lady. God love her!!!!

    Great job Rachel! My daughter (8 and i cooked this together. We bothed LOVED this! Made it as listed, perfect.
    The lime at the end was just the right touch.

    I couldn't believe how easy this was to make. The potatoes had such great falvor. These by far were the best mashed potatoes.

    This was my very first thirty minute meal. I've been hooked ever since. With just this one meal my husband was floored by my new "cooking skills" Definitly make sure that the pan is screaming hot before adding the meat. It does make a difference.

    I have been making this once a week for about 3 months now and we all LOVE it! Very easy to make! To save time, I slice the onion and pepper the night before, right after the kiddos are in bed. I use bell peppers instead and the kids rave. Nothing better than seeing them eat their veggies! Thanks Racheal - you're the best!

    I have made this entire dish before. Thought that these potatoes would work with corned beef...YUM! The combo was perfect!!! I had no scallions so I used shallots and garlic--delicious!

    I can't even tell you how many times I've made this! Easy and satisfying and one of those "use what you have on hand" recipies. I always have onions, bell peppers (any color and garlic and potatoes on hand. I usually use Chipotles in adobo since I always have a can on hand. Chicken is great with this too if you don't have or want to use steak. Potatoes with or with out the cheese both delicious. Even if you only use plain mashed potatoes YUM! I used dried thyme (1 teaspoon since I always have it on hand. I've often done it without the lime. Still delish! This is definitly a recipie that doesn't need a special run to the grocery store and always a great meal to end the day with.
