This is a tasty and refreshing summer treat, and easier to make than your average ice cream. I used splenda instead of sugar to make the simple syrup, and it turned out great. Definitely recommend giving this one a try.

Made this years back and got rave reviews from all my friends--so much so that one ran out and bought an ice cream maker to make this very sorbet. It was great on a hot summer day, refreshing, easy to make, tastes great. Remove the mint leaves before churning; the recipe isn't clear on that. Love it.

I made this sorbet for my Derby Day party, and it was a HUGE hit! For those familiar with making sorbet, it won't seem to thicken up when you churn it, but don't worry. After mixing, chill for at least 8 hrs before churning. I let it churn for about 25 mins, after which it still seemed way too runny. But it thickened up nicely in the freezer overnight. Next time I might cut down on the sugar a little...it's very sweet.
