Very tasty. This was my first time searing a steak so I was a little confused about the timing, but other than that, this was a simple recipe.

This was an excellent method. One consideration not mentioned is the thickness of the steak, which affects the pan searing time as well as the oven time. Four minutes on each side for searing and 6 minutes in the oven would have made great shoe leather!

I was cooking this steak for my son, and I'm glad he intervened. Maybe a thicker cut would have survived, but not my puny little 1" one.

Summary: great method, but adjust the times for your 'piece of meat'.

    Recipe from another site:
To sear-roast T-bone steaks, preheat the oven to 500 degrees F (260 degrees C with an ovenproof heavy skillet inside.

Remove the pan with oven mitts and put it on top of the stove over high heat. Put the steaks in the skillet and cook for 1 to 2 minutes each side. Take the skillet off the stove and place it in the oven. Cook for another 3 to 5 minutes until they are done the way you like them. Your T-bone steaks should have a nice crust on the outside.

Came out perfectly medium rare - and t-bone is already so flavorful that salt/pepper/oil is more than enough.

This was yummy! I cooked about 20 pounds of T-Bones (yes, it was the never ending stack of steaks with this recipe. I added garlic powder to the salt/pepper mix and just used vegetable oil (what I had. Cooked it 4 minutes per side and finished it off in the oven for about 5 minutes. My whole family (including relatives and friends that came by just loved it which made me sad because there were no leftover steaks!

OMG-awesome! I put some garlic powder with salt and pepper. I did as recipe suggested took meat out 30 min. before cooking. I only let mine sear for 2 minutes per side was not as large as the recipes. I should have decreased by oven cooking time by about 2 minutes. I will tonight because my husband and i really enjoyed dinner last night. I also prepared homemade fried potatoes with onion. Yum Yum. Better than average restaurant.

I have never seared a steak in my life. I've just been making them all well done on the grill. I watch every single episode of every single Gordon Ramsay TV show and he inspired me to try it. Every show, it's sear this, sear that, what the hell does it mean? Wife comes home with T-Bone steaks, I find this recipe and it's absolutely delicious! I substituted olive oil (didn't have canola and added garlic salt to the salt & pepper rub pre-skillet, and it was amazing. So much flavor, cooked just right, I am VERY enthusiastic about my new hobby!

I've made these steaks using this recipe a few time. Not only is is easy and fast - the steaks turn out amazing. As others have warned, make sure to disconnect any nearby smoke alarms and reconnect when done, because it does get very smokey.
My husband loves this because this recipe is really good about keeping me in check, to prevent me from over-cooking the steak. (A repeat, offending problem for me. Next time I might try a dry rub, but this is a great basic steak.

This was the best steak that I have ever prepared. I used a cast iron skillet. It was great. I was so simple. I can prepare a great meal that my boyfriend will think that I spent hours cooking.
