    I always make sure I have enough strawberries to cover it in case it cracks (I've baked it with a pan of water and without, I get cracks half the time, either way.
    I could not find the chocolate wafers anywhere (apparently Central FL grocers believe if it doesn't have frosting, a chocolate cookie shouldn't be on the shelf. I even asked. so I bought pre-made oreo pie crust, broke it up and measured it, then omitted the sugar from the crust part of the recipe, worked like a charm.

    Does 2 1/2 (8 oz. cream cheese packages mean 2 8 oz & 1/2 8 oz? Or is the 8 oz altogether?

    Very delicious and surprisingly easy to make for a professional tasting cheesecake. Just a little rich for my taste and could use some more chocolate, but otherwise exceptional.

    I was looking for a recipe for a couple that wanted Chocolate Cheese cake for their wedding cake and centerpieces on each table , total of 22 ...I made this and they came to sample it and they said it was delicious!! Wonderful!!
    I made a brownie bottom for the crust instead , thats what the couple requested and also I make the recipe 1 and half times for a 9 inch Spring form pan , as requested they wanted a thick cake... It turned out beautiful... I topped the cheesecake with Kiwi Fruit with a clear fruit glaze and made a chocolate icing border.....
    The cheese cake had a few cracks on the top tho I only baked it 1 hr and 15 minutes. Even though there was more in the pan than the recipe called for. But that is ok for me because I garnished the whole top with kiwi fruit and fruit glaze.

    I love any type cheese cake but my husband wouldn't eat any. I followed the directions and it turned out beautiful. Since it was chocolate my husband decided to "try it". He LOOOOVED it!!! Thanks Emeril.

    I have never made cheesecake before, and although messy, this was a very easy recipe to follow, and it turned out great. I couldn't find a vanilla bean anywhere, so I skipped that ingredient, but it was amazing anyway. I highly recommend this one!

    Ah-mazingly good.
    Truthfully, there wasn't enough chocolate though.
    I put twice as much chocolate it for it tasted too bland.
    Otherwise, delicious!

    I made this cheesecake for Christmas, 2009. What a success! This is the most decadent, perfect cheesecake. I'm an old hand at baking and I must say, this is truly the best, all-around cheesecake; creamy, rich, tasteful, with the most wonderful cookie crust that didn't get soggy. Absolutely good to the last crumb! Thank you, Emeril, for this keeper recipe!

    Made this as one of my desserts for a Book Club party and actually caught people with forks poised eating right from the Cake Tray. Texture was wonderful, taste was heavenly and it was a snap it make ... All in all one of the best Chocolate Cheesecake recipes around.
