Love the chicken. Reminded me of younger years in NO. Made one change and that was to use Tony Charchere's Creole Seasoning instead of the house seasoning. 5 stars

This was really good fried chicken. I was hoping for a little more heat though with the hot sauce. I think next time, I would marinate the chicken in the egg/hot sauce mixture to spice it up a bit. My family really liked it but again with all that hot sauce I was expecting more heat. It did add a nice tang to it though. I did add baking powder and salt to my AP flour as I did not have self-rising flour. Thanks to the reviewer who left that comment!
To all the new cooks: most chefs/cooks on these shows have their own "blend" of spices. It's not necessary to make up a whole batch of these blends. Just use enough of the ingredients for what you need. Good fried chicken recipe.

I made it gluten-free and it was SOOOOO Good! I replaced the self-risng flour with gluten-free flour and a bit of baking powder. I also omitted the hot sauce for my kids' sake....but it turned out as well as I could hope! PS--I don't think you're supposed to use the whole 1 cup of salt in one batch...the House Recipe is for keeping in your cupboard for future use...and you use some here... =

I dont understand all the good ratings unless i did something wrong but 1 cup of salt in the house seasoning is crazy the chciken was so salty you couldnt even eat it i would guess 1/4 cup like the pepper and gralic powder is a better chocie

This recipe is exactly like our long lost recipe cooked and given to us when our children had a nanny from the deep south. Over thirty years ago. The best if you love fried chicken.

This chicken was the best I ever made or tasted! I was so proud serving this to my family! Thank you Paula, for giving us an excellent recipe for fried chicken. This is the only way I will make it now! For the people who used the whole cup of salt in the recipe, Really? Maybe you should not be in the kitchen at all!!!!!!!!! Common Sense People!!!

This was the first fried chicken that I made that my family actually liked. It was nice and crispy and very tasty and very easy to prepare. Next I can't wait to try the buttermilk fried chicken.

Must agree with previous comments. Too much salt. It was very good but way too salty. KEEP READING FOR MY EDIT. After reading the reviews (which i should have done BEFOREHAND, I think the recipe could be clearer about how to use the House seasoning. That was my mistake-I dredged the chicken in the House seasoning. Another review suggested sprinkling it on. I think that would be a better idea.

I ‘m good about reading reviews and comments before I spend any money to make a dish; it doesn’t matter how good the dish looks on TV. I go to the real source, you the viewers, who will tell me if something is worth making. About 90% of you gave good feedback on this fried chicken, so I purchased the items to make it. I have to say there was nothing special about it in any way. Thinking that I missed it somewhere, I made it again the following week. The same thing happened… there was nothing spectacular about the taste. It tasted like simple basic fried chicken. I could not even taste the hot sauce in the chicken and could have easily used the regular flour I had on hand instead of purchasing the self-rising flour. Sorry Ms. Paula, still enjoy watching your show.
