    Just right! Not BBQ saucey, just a very complex flavored ketchup. Good consisitency, not much effort, just time on the stove. No straining necessary!

    I made a double batch for Xmas gifts--doubling this recipe yields roughly 24 half pint jars, just right for giving!

    Canning note: adding a few Tb lemon juice to the ketchup helps ensure a good seal.

    We have been looking for a homemade ketchup recipe and we have found it!!! This recipe is worth every second of standing over the stove and stirring.... Wait and wait for this to get thick, you WILL NOT regret it! PERFECTION!! Just the right amount of heat and sweet! love it!

    I do not shy away from lots of ingredients. However as the number IN goes up I expect the taste OUT to rise as well. This didn't happen here. I have tried simpler recipes with equal or better results.

    However the list does give you an idea of the possibilites of the spice rack, and serves as an example of experimentation. I only wish the results were more expressive of the effort.

    So, is a so-so 3 for me.

    Yes, it's time consuming -- but if you crave some of that old fashioned flavor (like Aunt Sue used to have for burgers to the family picnic in 1965 it captures it. I'm planning on canning my next batch for Christmas for friends.
