I had the ingredients on hand and decided to try it, despite the fact that my 14 year old only likes a few vegetables. I guess because of the egg and cheese, it all went together well and tasted great to all of us.

This was really really good. I fixed it with the simple salad from the Quiche Lorraine recipe. I reduced the number of eggs to 5 since it was me and my husband but I used my judgement and used plenty of the veges and seasonings. I also used whole milk instead of cream and I used gruyere cheese. I also added a little of the essence to the egg mixture with the salt and pepper. I will definitely make this again and again. Very good for a meatless dinner with a salad, cottage potatoes and toast.
