Delicious side dish and definitely a keeper. I will add more carrots next time. I also put less red onion than suggested as I find red onion overpowering.

I was hesitant about this recipe, but it turned out great! I don't like onion, so I omitted it as I do with most recipes. I also did not have pine nuts but will get some for next time. Without the onion and pine nuts, the recipe turned out great! I cooked up brown rice and put the carrot/chick pea mixture atop that for heartier meal. Will definitely make again!

This recipe went over very well at our house. I ended up making it without the chickpeas (husband bought black-eyed instead of garbanzo, but we didn't miss them.
It was fairly difficult to 'shave' the carrots into anything but tiny shards, I ended up using a combination of the peeler and a knife-- took awhile. I think it was worth it though. Although I don't have kids, I feel like this might be a good recipe to get them to eat their veggies.

This is one of the easiest meals I've ever made. I came across it in the 'side dishes' section, and I made enough for 2 servings, one for now and one for lunch tomorrow. I used more garlic than called for, and also added crushed red pepper. This dish is so tasty and unbelievably easy, I will definitely be making this over again. Thanks a lot!!

I think my husband makes this about once a week for me. Though it has never been as good as the first time he made it, I still love it! It's simple, quick, and a great side to any dinner, lunch or even as a snack... eaten hot or cold.

I'm always looking for easy veggie ideas for my family including a toddler. She loves chickpeas, carrots and garlic, so this seemed perfect. It was very tasty and easy to prepare. I would suggest that you taste as you go especially when it comes to the wine vinegar, salt and pepper part. I would say those 3 ingredients are the key to make this dish come alive. I would make it again...my toddler loved it!

Ooo I'm the first to rate! I thought this was really delicious. I made it for lunch and it was really fast and easy! I didn't have a good peeler so my carrots peels were like the size of pasta... I'm sure if I had larger carrot peels it would be way more delicious and not feel so much like I was eating spaghetti!! I love how the ingredients are super cheap too! I will definitely try this again!
