We were just fortunate enough to catch this show when it aired. After 5 years as a T2 diabetic gaining weight on the ADA killer-high-carb diet, I have realized I need to be doing a modified South Beach/Atkins low-carb diet and have shed 35 pounds in 11 weeks. Well on my way to much improved health and better lab work test results, the only thing I have missed and been craving... PIZZA, PIZZA! Well, this recipe IS the answer to the cravings... and the solution to not overindulging in PIZZA-crust carbs in the future! GO FOR IT... anything you like on YOUR PIZZA that can be chunked and skewered will work with this method/recipe. A few bread croutons are just enough to give the "comfort" to this "PIZZA" without about 50g of carbs per slice/skewer! I am "thinking about a white pizza" version of this... the conundrum is the cubed spinach since the alfredo sauce can be in the dipping dish. Do you think the croutons, chicken, mushrooms, onions, & peppers on the stick with the spinach in the alfredo will work? Hmmm, worth a try! Once I can say I have lost all the weight I need to lose to be back to pre-T2 weight, I plan to keep using this for 3 out of every 4 "pizza nights" because it is so easy, fun, and low-carb! Thanks for a great idea that I would never have considered unless I saw it done!

I've been doing this for years, with my kids, & w/BSA/GSA!
I highly recommend that the meats & veggies be cubed. We
like onions & pineapple, so we add that to the skewers as
well. Sometimes we bake them, but this is delicious
grilled; adding the cheese @ the last moment by simply
rolling the skewers into the grated/shredded cheese. To
the Mozzarella, I like to added some Parmesean cheese as
    well.
