    Haven't made this yet but it screams for some garlic!!! Maybe another herb.... Not sure which one!

    Really bland with no taste . I was very disappointed . I expected a creamy dip put it will have to go to waste !!

    Delish!! The flavor was great. Mine came out a bit too liquidy, but I think that may be because I added a little of the roasted pepper liquid to it (lots of flavor there...still delicious anyway.

    Delish!!! Reminds me of pimento cheese. My 4yr old, 2yr old, and hubby loved it! It doesn't need anything....perhaps the other reviewers didn't add enough salt. As far as the texture, ricotta is different, it's not going to get smooth. I would not sub sour cream for ricotta. However, if you have to add something, I would try a little cream cheese. I think it's great as written....it's wonderful with tortilla chips and would probably be great on toast too. Thanks Rach!!!

    Ok from a working wife and mom that still likes to entertain or bring dishes to events...this has potential to be a winner. #1 It's quick! #2 It's easy #3 It's economical and inexpensive. As it the taste is bland unless you just have a thing for ricotta and roasted red peppers. Add some fresh chopped garlic, salt, pepper, and oregano & you have a very tasty dip. I garnished it with actual red pepper wedges around the edge of the bowl and then I chopped a little of the red pepper and put it right in the middle of the bowl along with a chopped scallion --- served it with tortilla chips vs. the pita since the tortilla chips are a little more salty for extra flavor!!!

    I was not expecting anything great based on the prior reviews so I halved this recipe and was very pleased. My 2 year old also loved it!

    I had really good, fresh ricotta from an Italian market at home and decided to make this dip with the leftovers. It was a waste of my good ricotta cheese. I even tried zazzing it up with some roasted garlic. This was a no go.

    I don't know if the texture problem other people had was due to underblending (I used a mini food processor or too much liquid in the peppers (she really squeezes them out on the show or what...but the texture of mine was good. I just didn't think the taste was.

    Maybe if it was made with sour cream instead i would of liked it more. but my family and i didn't like the ricotta cheese. but then again this was the first time i've ever used it. but i think i might try it with sour cream instead.
