I found my new oyster dressing. This was wondefull, everyone enjoyed it and a a huge amount to go a long way. I will make this every year.

Christmas was a hit!
I made this dressing for Christmas and everyone loved it. I followed the recipe and it was wonderful. The only thing I did different was make the cornbread and did mixed everything together except the eggs and oysters the night before. That let all of the onions and spices soak in. I did add a little of red pepper to it to give it a "little" kick...... Will deffently be fixing this again....esp. since none was left!

Great New Twist For Thanksgiving!
I added your oyster dressing to my menu this Thanksgiving. It was a hit nothing was left. I was afraid to try it since my family is so traditional. The other dressing was left all alone. Thanks again for the new twist to Thanksgiving Day.

This is a very good recipe. The cornbread does the trick. I added half cup of sweet onion and substituted Bok Choy for celery. Yummy ya'll.

W/c to follow: TV show or website instructions???
i don't know why there is always something wrong with most of the recipes on the site-w/ any chef or cook. I watch food network almost everyday and recall every detail when Giada or Sandra, etc cooks but when you get to the recipes & instruction here on this site-there is always something wrong or missing or an additional measurement. This one, as I saw it on TV and on youtube-Paula included the oyster liquor into the dry mixture. But above it says "drain the oyster"-which is correct? As for me: I will follow what Paula did on TV. 2 stars for misleading the audience!

Amazing Flavor
I always run a "practice Thanksgiving" a couple of weeks before the big day. My Husband and son are happy test subjects. They were moaning so joyfully after each bite, I had to close the windows so they neighbors didn't think something strange was going on! My shortcut cheat...Marie Calanders cornbread mix. Just add water and bake. I followed the rest of the recipe to the T (the 2 cup stock version). Turned out a little soggy (like bread pudding) so I think I might add one or two more slices of bread. Or I can bake the cornbread a day ahead of time so that it has a chance to dry out a bit. I did use fresh oysters that I quickly drained. If I had drained them better, I am sure the consistancey would have been perfect. The flavor of this dish is amazing!. If you chop the oysters up people who are creeped out by fish don't even know what they are eating! They can't place the flavor and absolutely love it. Fabulous leftovers!!!!

Great Dressing!
I always thought that my grandmother's dressing was the best, but since she passed away back in '81, I have never been able to duplicate her stuffing recipe. I made Paula's dressing 2 days ago and it was a huge success! I had to use canned oysters instead of fresh since I live in Indiana. I realized after I had made the stuffing that I didn't add the salt, but luckily I used Zesta salted crackers, and we didn't have to add any more salt during the meal. The stuffing was absolutely wonderful, and In my opinion, it was more tasty the next day while eating left-overs. I would highly recommend this stuffing recipe!!!!! This will be the Oyster stuffing recipe that I use from now on, and I can't wait to make it again!

Oyster Cornbread Stuffing
I tried this Oyster Cornbread Stuffing recipe and did not like it the first time. The raw oysters made it too fishy tasting. So now I give the oysters a rough chop and saute them in butter for about 5 minutes before adding to stuffing. I have also tried this with store bought cornbread stuffing. Tastes exactly the same. And yes, there is an error in the amount of broth used..........add just enuf to wet other ingredients appropriately......about 2 cups.

Truly a great old Southern recipe
This is an old Southern coastal states recipe, so if you are not from the South, you won't understand the old Thanksgiving tradition of this cornbread and oyster dressing recipe that everyone loves in this area. Thank you, Paula, for publishing this recipe. I can't wait for Thanksgiving and all the great Southern food ! A friend who has an aunt in her early 90's still makes this every Thanksgiving for her family. They all look forward to her oyster dressing on holidays.

A huge hit
I made this last night as a trial run before Thanksgiving, and it was huge hit! I did forgo making the corenbread home made and used 2 packages of jiffy corenbread mix made according to package directions, and then I added in the chicken broth a little at a time until the consistency looked right, so I would say I used about 2.5 cups of broth. This will be re-appearing for Thanksgiving this year

Not too good
Normally, I LOVE dressing but didn't like this one at all. I cooked the recipe while watching the recording of her cooking it on Food Network and had the recipe off this site. I didn't like the taste at all and thought it looked ugly-almost a greenish tint.

Don't Use the 7 Cups of Stock In the Recipe!
On the show, Paula is shown using only about 2 cups of stock. This should produce better results than the one I got after using the 7 cups of stock called for in the printed recipe. WHAT AT SLOPPY, EMBARRASSING MESS! I will give it another try but next time I'll just use two cups instead of 7. I give this recipe a Poor rating because of the obvious typo online.

This Rocked
First off, I saw the show on which she prepared this dish and she used 2 cups of stock. I was trying to get ideas on what I was taking to the family for Thanksgiving. Second, I never follow recipes exactly, I gotta change them. So I sauted the celery and onions with a little juice from "Embassa chipotle peppers" can, I didn't use the whole can. You can buy this anywhere in Cali, but you might need to go to a Mexican market in other places. This gave it some much needed heat. When mixing all the ingredients together, I added cran raisons, and this just made the dish perfect. I got rave reviews on this, give it a try.

AWESOME!!!
This was The Best Stuffing ever.... I made it last year for Thanksgiving just to try something different... but most of My Family doesn't eat Oysters so I used a Spicy Breakfast Sausage instead & it was Awesome Big hit!!!! WHEW! (& on My 1st time ever getting to make the Stuffing) ;) My Mom kept My recipe so I've been on here searching for an hour now & YAY I found it again!!! I'm going to make it again this Turkey Day & Highly recommend it!

Just what I was looking for
This is a recipe that I had been looking for for awhile. It had good flavor, although I used premade stuffing mix (herb and cornbread)to make it easier. I added more spices (Emeril's BAM), and I am glad I did. It had just enough kick. It would have been too bland without it. I used fresh local oysters, which I am sure made a difference, too.

I always make cornbread dressing, but the oysters was a delicious addition. I couldn't find fresh oysters so I used smoked instead. It had a wonderful flavor everyone really enjoyed it.Paula really has the best recipes.

Never tried it, don't really want to
My husband comes from a "mixed family", (northern mamma, southern daddy,) and he insists that I make this for him EVERY year........which I do....complain about the stench of the oysters, but I make it none the less.....he loves it, so that is all that matters to me!
