I had this today at our local cafe. My husband ordered it and the thought "Yuk" but I tasted it and couldn't believe how wonderful. After talking with the owner of the little cafe he told me this was an Emeril recipe. I immediately went to the grocery and cooked it for dinner. IT is fab-u-lous!! Definately a keeper!

I had high expectations for this soup and believe me it was good, but I feel like something was missing. I usually love sausage, but feel like kielbasa was the wrong choice. I also thought it was going to be more thick with the squash, but it became pretty thin. Overall, a good soup, but I didn't fall in love with it.

I did every step the same way besides , I made the rice with wild rice rice-a-roni with there seasoning packets and instead of kielbasa I used johnsonville sweet italian brats . UMMM UMMM Soooo good.......

I made this soup yesterday, exactly as the recipe is written. It was very delicious. My entire family loved it. The butternut squash was the perfect base for the rest of the ingredients. It had a nice depth of flavor and the sweet corn bits were a delight in each mouthful. Everyone should try this recipe. This is a soup that promises to delight and impress your family as well as company, too.

I wanted to find something that went beyond the basic cream of butternut squash soup. This recipe is it! A big bowl of this soup is a full and hardy meal. I did need to add a little more salt and pepper to the dish before I served it.

I ended up adding more sausage and corn than the recipe called for, and I thickened it with some corn starch mixed with water to make it more of a chowder. The flavors compliment each other perfectly. It is time consuming, but worth it. Great for cooking on a Sunday while you're doing house-cleaning and laundry. I served it with some cornbread muffins. Yum!

After reading the reviews, I cut the recipe in half since it was only for 2 people. I did have more broth in the end and decided to add asparagus and some egg noodles to balance out the thickening. Wow, what a difference!! My only problem was that I used too much ground pepper when I baked the squash. Overfall, it was a wonderful and easy recipe to make!! Eventhough I did cut the recipe in half, the egg noodles and asparagus added more servings, but who's complaining???

I saw the reviews and decided to give this recipe a try. I have just now realized the I love the taste of butternut squash. I used the lower version of the half 'n half and smoked turkey sausage instead of the full fat versions. I also used 2 cups less broth than the recipe called for. I tasted the soup before I added the half and half and afterwards. I truly enjoyed the soup a bit better before the half 'n half was added. I have brought everyone at work samples of this fine soup. Can't wait to get the reviews, I know that they will be spectacular. This isn't a dish to make unless you have a bit of time to prepare the meal, but every minute of your time will be worth it.
