Let me say that we roasted a turkey on Sunday and had leftovers on Monday, Tuesday, and Wednesday. After having spaghetti on Thursday to have a break from the turkey. I tried this on Friday. It was fabulous! I never once felt like I was having turkey again. It was different AND yummy. This is now my favorite recipe for left-over turkey (with the exception of turkey pot pie.

This is a solid recipe that I will keep for post-thanksgiving meals to come. I ended up using twice the amount of mashed potatoes needed just to use them up and it was still delicious! (of course, I love mashed potatoes, so the more the better.

This is my second year using this recipe for my Thanksgiving leftovers because my family loves it! I didn't have any mashed potatotes leftover this year so I just substituted it with my stuffing and it worked just as great. This one's a keeper.

This was fast, easy and delicious. I used the left over gravy as well with the broth. I will be using this recipe every year with my left over turkey & mashed potatoes.

I am not fond of leftovers in general and am typically overwhelmed by the leftovers at TG. I made a panini with some turkey and cranberries and gruyere that was just outstanding and now this. I also used gravy leftovers instead of the flour and stock so I got to use up a good portion of turkey, gravy and all of my potatoes...perfect and tastes like a new meal. I did add a stalk of celery in with the carrots and onions too. I am actually bummed to see my leftovers dwindling this year and am contemplating brining and roasting another turkey! Thanks Emeril.

I've been using this recipe for a couple years now. I absolutely love it. I use it year round using a roasted chicken from the grocery store. Since I don't make mash potatoes very often, I usually use a box of instant Betty Crocker Roasted Garlic and Cheddar Potatoes. I know it's cheating but it's so much quicker and really almost as good as real potatoes. I also don't always use mushrooms and sometimes add canned green beans and corn. Again, it's a great recipe, try it.

We don't like leftover chicken or turkey. I decided to try this recipe, since we had tons of leftovers this Thanksgivings and didn't want to throw it out....seems a waste to throw out good food. I used the mashed potatoes from our dinner too. The recipe was easy to follow. I thought my boyfriend would hate it ..NEVER eats leftovers, especially turkey. Well... I can tell you ....he eat most of it himself. He had four helping...I had to tell him to slow down, before he got sick. He gave it the highest rating. I also think it is the best use of leftover turkey. I Loved it!!!
