I purchased a 6 lb prime rib for $57 and was very stressed about about ruining it!!! I can not believe how easy recipe was - I put it in the oven for 2 hours, pulled it out, tented and then carved up a perfectly pink prime roast of beef. This is a great crowd pleaser for a fussy, meat & potatoes crowd. My four year old loved it!

Had out of town family for dinner last night. I wanted to do something special, and this was it! So simple. I was kind of scared considering the cost of a 6# prime rib, but it was worth it. I do recommend investing in a digital thermometer. It allowed me to take the roast out at the optimal time. Next time I might go a little earlier, like 130 degrees.

I followed the recipe exactly and wasn't disappointed. Had this for Xmas dinner it was a huge hit. This was by far the easiest prime-rib I've made with great results. The only thing I changed on the au jus was that when it was finished I let it sit and then the fat layer was ladled out. I would also double the recipe for the au jus next time, wasn't quite enough.
