    I served this soup at a recent gathering and it was the most raved about food item. Easy to prepare and absolutely delicious. I did substitute vegetable broth for the chicken broth to make it vegetarian. This gave the soup a reddish hue. I also only used 1/4 cup grated parmesan stirred into the soup. I made extra Parmesan Crips and put fresh coarse ground black pepper throughout before baking. This made a wonderfully appetizer in addition to being served with the soup.

    Not that it was hard to make but it just wasn't worth the effort. The soup has a little flavor to it but not much.
