I just made these. I had the same dry dough problem that was mentioned in other reviews I used medium eggs instead of larg so I added another one to the dough and kneaded it together. It worked great it brought my dough to the perfect consistency. I also used fresh ground nutmeg they could have had a little more ginger but they thill had a wonderful flavor. I hope they are still as yummy tomorrow. If I make them again i will leave out the 3/4 cup flour.

I was also very surprised how dry the dough was. It was very difficult to roll and work with. I also am disappointed in the level of spice in the cookies. The comparison to cardboard that some of the other reviewers used doesn't seem far off. I am normally a fan of Paula's recipes but I will not be repeating this one.

I was very surprised at how dry these cookies were. I had made 2 batches from another recipe I had but decided to make these as they were Paula Deen's recipe. I should have cooked 1 or 2 first before making the whole batch. They were extremely dry! If I had known I would have cooked them with holes and then decorated and strung them and given them out as ornaments. Big disappointment. :(

Also, I would cut out some of the butter. I tasted more butter in the cookie than I did spice or molasses.

This is a GREAT recipe...with some tweaking. I made a gingerbread recipe earlier today that was a total failure. It tasted aweful and wouldn't get anything more than doughy in the oven. This recipe was wonderful, after I took some advise from the reviewers. Here is what I did differently:

I took away 1 cup of flour. My advice is to take away more, and then add flour until you get the right consistency. It seems to be different for everyone. It shouldn't be sticky, but a pliable dough.

Secondly, I added an extra fourth of a teaspoon of the cinnamon and nutmeg and left the ginger the same amount.

The result: A husband approved gingerbread cookie that was crunchy on the edges, but still soft in the middle. They plumped up beautifully! And my husband is in the military, so anything less than perfect isn't good enough. ;-

Oh Paula. This was a HUGE disappointment!! I should have read the reviews beforehand. The cookies were SO dry and had absolutely zero flavor. So sad.

I wasn't expecting gingerbread to be anything more than just fun to decorate and cute to look at, so I was very pleasantly surprised with how yummy these cookies were. They don't just sit there looking all pretty like they're just for decoration at the holiday parties, they're quickly snatched up and gone within the first few minutes that they're set out on the table! I have been using this gingerbread recipe for years. It is a fool-proof, fun recipe that has become an annual holiday tradition to make. Thanks Paula!

Awesome recipe Paula! I've been searching for a perfect gingerbread cookie recipe for YEARS and this is the ONE! Perfect cookies for ANY occasion! My kids and grandkids couldn't get enough of them. I used several cookie cutters AND my cookie form pan for this recipe. It worked perfectly for EVERY cookie. It was fun to cut a special shaped cookie for each of my loved ones, and then give them the cookie cutter along with their goodies! Thanks again!
