    This is a terrific recipe - wonderful for a dinner party or special evening. I added a few tablespoons of Calvados apple brandy to the apple butter. I might add a bit more lemon to the cheese mixture as well. Maybe even increase the vanilla in the crepes.
    Only qualm, how to enhance the presentation - apple butter is delicious, but it's hard to "dress up".
    BTW - creme fraiche could take the place of the sour cream, but the sour cream really balances the sweetness in the dish.
