    My MIL and I made this for Thanskgiving. I'm so glad we did. I'm vegetarian, so this was my meal centerpiece. It was spicier than I thought it would be, which was a pleasant surprise. The red pepper adds a nice kick. We substituted feta because we couldn't find goat cheese at the store. Easier to make than the recipe makes it sound. Definitely will make this one again.

    Wonderful recipe! I love to roast my peppers and garlic in the oven. I really struggled with the phyllo, until I read Emeril's Spanikopita instructions:
    Take the bottom right corner of the strip between your thumb and finger and fold over the spinach filling to the left to make a triangle. Gently pull up the bottom left corner and fold up to make a second triangle. Continue folding until you reach the top. Place the triangle, seam side down, on the prepared baking sheet. Brush the completed triangle lightly with butter.

    i great great comments when i cooked this for friends - and most of them hate the vegetables in this dish!
    plus, if you have left over ingredients, they make great additions to other recipes

    I forgot to get some of the ingredients at the store so I sent my hubby, he brought back one 6oz bag of baby spinach and not filo dough but, ready-made pie crust, I made do and substituted sun-dried tomatoes instead of the peppers and left out the oregano. I also used to 4oz goat cheese(soft not crumbly to make up for the spinach. We had enough for three strudels each and I even made him a calzone for lunch the next day. He was the envy of his co-workers!

    I made a double batch of these,some for dinner on Saturday and the rest I took as an appetizer for Easter Sunday to be served with Greek Lamb. (I refrigarated the stuffing overnight. Wow, I should have made more, huge hit! Personally I would add a little more goat cheese as it seemed to get lost with all the other DELICIOUS flavors. Yum, forget Spankopita these are better!

    tonite we had scarlett snapper and the veggie strudels. the strudel complimented the fish very nicely. it was an explosion of flavor and a very big hit, and i'm not a fish lover. i used a recipe from a grilling cookbook (better homes and gardens biggest book of grilling for the snapper and smoked it lightly over oak. i made a pesto of parsley, cilantro, parmesan and garlic to top the snapper along with fresh roma tomatoes. this was a wonderful departure from the usual, and we'll definitely have this meal again. thanks emeril.
