These poboys are AMAZING! I've made them at least 5 or 6 times and they're always a hit. The meatballs are so flavorful, and combined with the pickled carrots and cilantro...omg to die for.

The first time you make this it will seem that it takes forever and requires all sorts of effort. To save yourself some energy and time, measure all the liquids for each recipe first (the pork mixture in a large bowl, the pickles into a saucepan and the nuac cham sauce is medium sized bowl. Once you have the liquids measured, measure the sugars accordingly except the sugar for the nuac cham should go into a mortar & pestle. After that, you can finish off the rest of the measurements and complete the preparation steps.
This will become a favorite for the entire family with their first bite.

Pork is great, Beef works well too. I didnt even bother with the food processor, make sure your shallots and garlic are minced very fine, just mix in the powdered rice one tablespoon at a time and mix again when you rub it into a ball. Emeril this pounds the palette!

I had to try this recipe after watching the show Friday night since I visit my local Pho restaurant several times a week. The ingredients were very easy to locate and the recipe was very easy to follow. This will definitely become a frequent meal in my household, it was a big hit!
