This crust is not perfect for pizza the crust becomes to hard and crumbles when eating. It is not like a NYC crust.

I've tried several other recipes for crust and this one is by far the best. It tastes better than most restaurant pizzas I've had. I used the techniques Emeril suggested on the show and the pizza was crunchy on the outside and soft on the inside. Perfect!

I was curious how shortening would taste in a pizza dough. The dough looked like regular pizza dough, both raw and cooked, and smelled great. Unfortunately, the pizza crust was somewhere between pizza and pie crust. I'll go back to a regular recipe with just water, yeast, salt, and flour.
