Looking at the recipe I knew it's not going to be good. I helped a cousin make this for Christmas dinner and it was simply a disaster. Yuck! It was forgetable! BOIL THE EGGPLANT?! MASHED THE EGGPLANT?! It has a very yucky texture and simply very bland. There isn't any single ingredients in the recipe that compliments the aubergine. Might as well go for a bayaldi of veggies which is 10 times better and easier to prepare and cleaner taste.

I tried this right after watching the show. I changed things a bit, by simply dicing the eggplant in cubes and quick stir frying it (instead of boiling. I salted/garliced it while stir frying.
I loved the recipe. It was creamy and I personally liked the diced eggplant. I also topped when eating with a bit of romano cheese. I'd definately make this one again. Thanks Paula.

This stuff is AWFUL! It has no taste and the texture of baby food. I nearly vomited when I tasted it, and my seven year old , who usually eats eggplant, spit out the first bite! I do not recommend this!

I love Paula and have tried many of her recipes. I may try this again and change it a little. I would saute the eggplant just a little (not too mushy, and then maybe beat a couple of eggs into the cream mixture to bind the dish. The eggplant was way too mushy and it was not appealing. I, too, had to throw it away. I didn't even want my husband to taste it. Thanks for the reviews! Carol

I made a double batch last night but it was not enough for four people. Everyone was clamoring for more! In addition to doubling the recipe, I also doubled the amount of clams the recipe called for, as my family are seafood lovers. Everyone wants me to make it again tonight!!!!

I love eggplant, so thought I'd try. It was delicious, but be careful with adding too much cream. Best eaten RIGHT away when piping hot. Had left overs and they were ok, but not as good. I'd give this 3 1/2 but that is not a choice.
