I prepared this recipe a few years ago, but it became buried amongst many other great recipes and I sorta forgot about it...until now! I used both drummettes and boneless, skinless chicken tenders and they were full of flavor and juicy! I also let my chicken marinate for several hours to assure all the spices had a chance to marry!! It was just as savory as I remember!!

The marinade gave the chicken such a flavorful taste, sweet and savory. The addition of a hot pepper or two sounds good too, I might try that next time. I made this in a big frying pan on the stove. Once the chicken was browned on both sides I lower the heat and covered until they were cooked through. Whenever I think chicken, this is the recipe that comes to mind.

Have made this recipe several times. Always add 5 medium seranno peppers chopped and seeded. Get rave reviews each time.

I added garlic and pinapple in hopes of adding something to brown the legs and add flavor....and, I marinated this for about 6 hours.....I started off with three of the legs in grill pan---burned on the outside, needed the oven to finish. So, I added pinapple rings and more juice to the oven pan---but still it took a broiler to get the skin even sort of brown.
The tatste, in the end, was of well cooked, tender legs; but so so bland---I think maybe the only way to fix this would be to add some seeded jalapeno? I really would not recommend this dish---sorry

I love the combination of cilantro and coriander; I used chicken wings (the best part of the chicken I always cook the chicken until "juices run clear"; rule of thumb. Great flavors and mop up the juices with a corn tortilla - WOW!

I use this on a whole cut up chicken on a grill and it's great. I prefer to use it outside since the chicken grease likes to bounce around.

I saw this recipe and wanted to make things easy for a party I was having. I skewered 4 lbs. of chicken tenderloins and marinated them overnight. The guests loved them!
