This steak was fabulous but the cooking time was off for Medium-rare. I cooked it about 16 or so minutes in total at 375* just to get it medium rare in the center. However the flavors were perfect and the steak was just juicy. I used the rib eye. The squeeze of the lemon wedges on top just made the Rosemary POP! Fantastic! I also did not drizzle olive oil on top after it was done-couldn't bring myself to do it because I am not a fan of raw olive oil but I agree with SKOC50 that it did not need it what so ever. It was great without it.

I don't normally eat a lot of steak, but this is definitely a keeper. The ribeye turned out very juicy in spite of being so thick. And the herbs really made this steak stand out. I didn't add any olive oil at the end. I just couldn't bring myself to adding the extra fat. Besides, I really didn't think it needed it. It was good just the way it was.

My boyfriend and I both loved this steak, and I've made it several times now. However, I don't buy the expensive Delmonico cut. I find it works just as well with sirloin or ribeye.

I made this for a family dinner - it was great - the meat tasted wonderful - and was exceptionally tender. I cooked it for 10 minutes because I like my meat medium well - my husband LOVED this!
