This is a great recipe. Don't change the cream, as we all know that there is no real replacement for heavy cream. I did follow other reviewers' suggestions and bake the tomatoes at 400 for 10 minutes before flashing them under the broiler. I also would recommend mixing part of the blue cheese into the spinach mixture before stuffing as well as a little on top. (You get it in every bite that way Lastly, I put a few breadcrumbs on the top with the blue cheese to give it a little texture variation. Really a good date night side item!

This recipe was wonderful! I love getting new ideas and this one was superb. It was easy to make, but looked gourmet. The blue cheese with the spinach was a perfect match. Thanks for such a great idea! :

I made these for my husband, who's a fabulous cook, for valentines day and he loved them! They're easy to make, but the presentation is very impressive.

I love creamed spinach...I love blue cheese...and I love garden fresh tomatoes. However this excellent recipe for creamed spinach is overwelmed by the strong blue cheese. You cant taste anything else (and I even used half of the blue cheese called for. Next time I'm going to try to top these with fresh grated parmesean as I think it is a cheese that is more complimentary of creamed spinach.

This was a hit at a recent party. The flavors were wonderful! I opted not to use nutmeg and was pleased. I did not need to cook everything in the oven first. The reduction of the cream is important and when mixed with the spinach it reduces more.

Great and so easy to make...used a product that I found called "light cream",,,less fat and reduced as Rachael said and the end result was wonderful. I love a receipe that makes you look good and this one does. So easy

I USED ROMA TOMATOES I GOT At OSTCO. SLICED THEM PRETTY THICK AND PUT ON PLATTER. I USED FAT FREE HALF AND HALF BUT ONLY A 1/2 CUP PRETENDING IT WAS ALREADY REDUCED AND STIRRED IN A LITTLE CORNSTARCH. ADDED TO SPINACH OVER MED HEAT AND STIRRED TILL IT THICKENED. PUT IT ON TOP OF THE TOMATOES AND TOPPED WITH THE CHEESE. MADE IT AHEAD AND WHEN I WAS READY, REHEATED IT IN THE MICROWAVE AND THEN POPPED IT UNDER THE BROILER. STILL A VERY PRETTHY PRESENTATION AND EXCELLENT!
