    This is good if you are making it small scale. However, most of these ingredients (cilantro, couscous, mint ,and kalamata olives aren't standard in my kitchen, so making a large batch is the only way to go. I must be slow at most of the prep, as it takes me at least 2-3 hours to make it. But then again, I quadruple the recipe. I make it a lot for potlucks, and it is a crowd pleaser every time!

    Poaching the chicken this way resulted in a very unappealing texture that can best be described as... spongy. Weird and not good at all. And I just didn't get the sauce - in theory it sounded like it might work, but this didn't do it for me. I'm a long-time cook and I can't remember the last time something turned out this bad.

    I chopped the chicken and poached it in pieces. Eliminated the olives and fresh cilantro. Subbed oregano and basil for the cilantro. Combined chicken pieces, couscous and curry sauce all in one big bowl. DH and I loved it - next time I'll add scallions instead of shallots and double the raisins.

    Really good, and really easy to make. It's always a requested favorite amongst my friends. The only thing is the ingredients are costly if you don't already have most of them. I always end up making double or triple the recipe and it takes quite a bit longer. I short variation is I cut the chicken up into smaller chunks for potlucks.

    If I could have, I would have rated the curry creamed chicken and couscous salad separately. My family loved the curry sauce--my four year old called it yummy mustard sauce--and this part of the recipe will be a definite repeat. However, unlike the other reviewers my family and I did not like the couscous salad. We love couscous but not prepared like this. The kalamata olives were just too overpowering and I did not feel the raisins and the rest of the ingredients complemented one another. I did double the recipe and have lots left over since no one had more than one serving so I'm thinking of adding fresh lemon juice and whatever else I can to make this palatable and into tummies rather than the garbage.

    I used the steps here to prepare curry chicken to integrate into another dish (no couscous, and it tasted great. Instead of pouring the sauce over the chicken, I tossed the chicken into it along with a garlic clove and some red onion.

    The end result was delicious. It's a very quick recipe to prepare, so another thumbs up right there.
