I thought this was one of the best oven fried chicken recipes that I've tried. It was really simple to follow and the taste was perfect. At first I thought that the curry would be too overpowering, but it was a perfect balance of taste. Also, the fact that it was cooked in an oven and not fried in oil made it even more delicious. I recommend this recipe to anyone who wants tasty fried chicken but without all the fat.

This recipe is great, but I recommend turing the chicken over half way through. Also, i wasn't sure what kind of curry to use. I tried Thai green and it turned out great!

So I actually tried making this the very next day after seeing the show - I was that excited. Problem was, Hubby and I were pretty hungry and in a big rush... I actually forgot the salt and pepper, and didn't let the chicken sit in the mayo coating before rolling in the bread crumbs....
But it still turned out GREAT! We gobbled them right up... with no guilt whatsoever. They were delicious. Will make this recipe again and again. Maybe even follow it next time :
