    This recipe was outstanding!! I made pretty much as directed, used a red and yellow bell pepper and added more chipotle peppers and sauce. Definately a keeper!!!

    I just swallowed my last bite and couldn't wait to write my review. This recipe is amazing, so delicious! It's sweet and spicy, and the cashews give a nice crunch. So yummy! I think this is the best recipe by Rachel I have come across so far!

    This recipe is amazing. The only thing I did different was to use my Jasmine rice instead of the brown rice recipe. I love bell peppers and onion so I added more. I don't really measure when I cook. If you have the ingrediets, just use the amount you like. Love this recipe!!

    This was very good, however, I put to much Chipotle sauce in the recipe and some of my family couldn't finish the dish because it was too spicy for them. I don't care for peas so I used Edamame. I didn't have any honey in the house, so I used Agave Nectar. It smelled so good cooking, I couldn't hardly wait to eat it.

    Really delicious!! Definitely a saver! My husband and I did not think the amount of chipotle peppers called for made the dish too spicy - it was just right for us, but definitely had a kick, so it might be too much for folks who do not like hot / spicy dishes. My lips are still tingling a bit from the hot peppers ;-

    Fantastic dish! Very tasty, we have it at least once or twice a month. If you don't care for spicy leave the chipotle peppers out, still tastes great!
