I tried this recipe , even though it didn't have great reviews and found it to be very good. lk5923 was right. Prepare 2 cups of mashed potatoes, cool completely, then add and mix in 1 stick of butter (I used light margarine at room temp., and the vanilla. Make sure the potatoes are dry. The mixture was too dry, so I added another approx. 1/4 c. of the potato mixture. It was very firm to work with and definitely not soupy. I divided the dough and mixed in some peanut butter. I really liked it better, not as sweet as the plain dough. Try it. I think you'll like it.

There is something wrong with the written directions. I too had to throw out the batch. Too soupy. What a waste of supplies.

paula was saying to make 2 cups of mashed potatoes with the 1 stick of butter added to it and then only use 1/2 cup and add more if need be and that is why it is not coming out right for so many people:

What a fun idea the eggs are. You can also use the plastic eggs that open as a mold. Put the potato mixture in the eggs and chill. Perfect egg for dipping. Put them on a stick and it makes it easy for the kids to dip and sprinkle colored sprinkles for different eggs. The kids and adults can go wild with this.

my family has been making potato candy for years.we just never shaped it.we use 2-3 tbsp leftover mashed potatoes(they already are flavored with butteradd vanilla( we never measure itstir together slowly add powdered sugar to form dough.this will get soupy just keep adding powdered sugar.we roll the dough out like a pie crust spread with peanutbutter,roll up & slice.depending on the time of year we add a few drops of food coloring to potato dough.i am 44 and have been eating this candy ever since i can remember
to everyone with the bad reviews give it a try again.this candy is really good

Who ever types these needs to get there crap straight! When you read the recipe in her cook book or watch her make these; it's 1/2 cup mashed potatoes. I love this and grew up with it. I also had it with peanut butter.

JUST AWFUL..........Wasted 4lbs Powered Sugar plus the rest of ingredients!
Was making them for a PArty that night..well guess what......HAd to go to store and get ingredients for another desert.Waste of Time and MONEY

I was very excited to try this recipe, I watched Paula make it on her show. When I tried it at home, the first batch turned out soupy, never set. I tried it again with instant potatoes and froze it this time. I was able to get them in the chocolate but the inside melted on the table when i served them. Not a good recipe :(

I made the candy following directions some other people put on the site that had tried it. Use only 1/2 cup of potatoes and two tablespoons of butter. They were way too sweet for my family. I will not make them again.
