    I saw the episode where she made these, and it looked like much less than 2 cups of potatoes that she added. I altered the recipe by using 1 small potato. The consistency was perfect. However, I was very disappointed in the taste. It was okay, but nothing special. I will not make these again.

    When making this recipe, mine turned to soup when I added the powdered sugar just like so many other reviewers comments (and my mixture was perfectly cold at the point. There is a mistake in the potato/butter ratio. I ended up adding a HUGE amount of confectioners sugar, and eventually got to the marzipan consistency needed to shape the eggs. Chilling the mixture won't help if it is soupy, you just have to add conf. sugar until it is knead-able (I added several large bags of conf. sugar before I got the right consistency, plus some extra from a tin I had in the cupboard. The eggs are good, but I also suggest using semi sweet chocolate for the coating (melt it in the microwave at half power. Good luck.

    I love Paula and enjoy many of her recipes, but I had a mess on my hand as soon as I added the powdered sugar!

    I tried as "Answer" suggested and made sure the mashed potatoes were cool. I also added the butter after the potatoes were cooled. As soon as I added the sugar the mixture was soup. I haven't even attempted to put it in the fridge. I'm very disappointed in this recipe. I was hoping to try it.

    Saw Paula make this and then read all the "soup" reviews. Yes, the recipe as printed is WRONG, according to all the other potato candy recipes I looked up. As another reviewer noted, the proportions should be for a couple of teaspoons of butter and half a cup of mashed potato, not two cups. And it should be stated in the recipe that it is SUPPOSED turn to "soup" until you add enough sugar and/or cocoa or coconut to stiffen it up, depending on your choice of flavors. What a shame that no one bothered to fix it for fans of the site in all this time. Hope this comment saves someone a big headache.

    I watched Paula make this on her show and couldn't wait to try it! My first attempt turned out a soggy mess. Then I logged on and read the reviews. Many of the reviews said that warm potatoes would melt the sugar and make it soupy. So, I decided to try again. I made sure the potatoes were cold and the butter was cold as well. Unfortunately, it was deja' vu' all over again! Still a soggy mess. A waste of time and ingredients times two!

    I tried this recipe and did not get it to harden. I froze the eggs over night and had to reshape them. The recipe did not specify the kind of chocolate so I used almond bark that was a mess. After dipping two the chocolate became thick it would not do anymore. I may try this one more time with the peanut butter and a lot less potatoe.

    proportions are wrong. what should be firm enough to mold into egg shape is runny. more liquid than solid. tried it twice. it was a disaster both times.

    I haven't tried this recipe yet but planned to do so this weekend. I read the recipe in Paula's "Just Desserts" cookbook last night, and got online to check to see what ingredients I needed to pick up on my way home. I swore the recipe in the book called for 1/2 cup potatoes, not 2 cups like the recipe online. That, plus using hot potatoes cool, could be why so many of you have a soupy mess. I'm still going to try this weekend, using 1/2 cup potatoes and making sure they are cooled. But I'm not going to promise anyway homemade Easter eggs until I see how they turn out!
