    I wouldn't think of putting chorizo in this. It has way too much fat and combined with the cheeses it would be pretty yucky.

    Anyway, I made it without the chorizo and it was excellent.

    I will be making this again and again. Great for parties as a dip for chips. I put it in my mini crock pot to keep it warm and everyone raved. Try it! Thanks Emeril!

    Working in N. Iraq made it hard to find alot of ingredients but with a little substitution the nachos turned out great. thanks

    Great queso recipe, the chorizo really makes them different. We added a little more heat, but very good. Definitely a keeper

    I used 1 lb ground turkey (instead of sausage and seasoned it heavily with essence and salt during browning. I used a 4oz can mild green chiles and a 4oz can hot green chiles. I also added 1/4 cup grated parmesano reggiano at the end and it was incredible.

    I have never used Chorizo before and I was surpised at how 'liquid' it got when cooked. It seems to be all fat. This was easy but too bland.
