    Yet another reason Reggie should have become The Next Food Network Star. Despite the fancy-sounding name, this is really an arugula taco in a cheese shell. The combination of Gruyere and cheddar gives the shell snap, and the tangy sweetness of the dressing -- with just a touch of shallot snap -- adds to the freshness of the arugular salad. I did find that there was too much dressing, so use it sparingly. Also, don't worry about draping the hardening cheese shell over a rolling pin -- we used the divider of our double sink (scrubbed clean and these took shape fine. We also used a mini-muffin tin to make cup-shaped shells, which seems more like what Food Network did.

    I don't use Gruyere much. This is really fantastic blend of cheeses~who knew? Reggie of course! Right on. I love you fresh healthy recipes that are heart healthy but makes everyone LOVE your cooking. I hope you write a cookbook. I will be the first one to buy it.
