French onion soup is my favorite, and Paula's recipe is by far the best I've found so far. It's very basic, so there's lots of room to play around until you find your favorite way to make it. When I make it, I always change a few things up - I leave out the bay leaf, only put in half the amount of thyme, and use sherry instead of white wine. I've never had any problems with my onions not cooking when I make this soup.

I made this for my husband, it was my first time ever making it. I don`t really like onions ,so I never tried it. MY BAD!!!!!!! This soup is awesome. I did add a little worecesterchire sauce and a few extra spices. My husband loves it! I can`t wait to try it with friends and family. Thanks paula!

I made this for my boyfriends parents when they came out to visit and it was my first time ever making it.It came out awesome and was super easy to make! I did tweak it a little...I added about 1/4 cup of Worcestercihre sauce and added some Emminthaler cheese to the Gruyere to mellow it out a little so it wasn't so pungent. Super good recipe and will definitely use it many more times. The parents and the boyfriend loved the soup : Thanks Paula!

I cut this recipe down for two using two onions, 4c broth, no wine with a dash of vermouth (secret ingredient!. It was wonderful and I wish I had made more.

I made the soup however, I added a few drops Worcestershire and caramelized the onions first. I split the recipe in half because we are only 2 here. My husband loved it.

I added a couple of ingredients to make it more flavourful--tasted very bland with just the ingredients called for in the recipe.
ADD: 1-2 Envelopes of Brown Gravy Mix to the flour for enhancement of the beef broth.
1/4 Cup of Worcestercihre Sauce to bring out the onion flavor.
I have been making this soup for my family for 6 months now. I don't understand how some here can't brown their onions,,,,,sheesh. Buy new pans maybe???

it was horrible, and I tried to add beef boullion cubes, and it did not help. Too many onions, and the thyme and bay leaf were sooo overpowering. Will not try again!!

Don't bother with this - It is absolutely awful! Eight onions completely overflowed from my 7 quart dutch oven and never ever browned. I spent an hour and a half trying to get them to brown and finally gave up. I will try a different recipe next time.

This was a good recipe, but I added 2 beef bouillon cubes, pepper, and a lot of salt for more flavor. The Gruyere cheese is very rich and adds a lot of flavor (start with a small amount so you don't overpower the soup and just taste the cheese, but the basic soup is a little bland. I used big crunchy croutons instead of the bread and that worked great.

This recipe is perfect! Even my picky child loved it. It's also easy to do and relatively quick. This has become an almost weekly family favorite since we first made it a few months ago. You will not be disappointed you tried this recipe!
