My family lives for french onion soup, so I decided to try this. I had to add a lot of salt and it still lacked a beefy, salty taste like at restaurants. For the money spent for the ingredients, I could have saved time, (not money and went out to enjoy the soup. Not worth the time and money spent. A red wine might have made the difference. Wouldn't make it again.

I made this soup last night for dinner and it was fantastic. Even my very picky 16 year old granddaughter ate every drop. I left out the wine and also used Provolone cheese like one of the reviewers, and it was beyond good and so very easy to make. You can't go wrong with Paula's recipes. But Paula...where was the butter? LOL I will make this again very soon!

I've always loved French Onion Soup and have made it many different ways. I recently tried a recipe called "The Best French Onion Soup" which had rave reviews from the people who made it. The onions took 3 1/2 hrs. in the oven to carmelize. You were allowed to stir it once and then return the cover....back to the oven. 4 Cups of waterwere then added at 1/4 cup intervals until evaporated and then you had to add 1/4 cup of sherry until that too evaporated. You then had to add seasonings and several cups of chicken stock and finally, two cups of beef stock. It was the worst tasting concoction I've ever tasted. I joked that the person who submitted the recipe had written her own reviews under various aliases. What a waste of a night!!!

For this recipe I only changed the white wine to sherry and added a little more than the recipe called for. (Rehab here I come... This soup is the best I've ever had. It was better than restaurant quality in a very short time.

    Thanks, Paula.

Restaurant quality. I made this for my parents - who are cooking NUTS and they said it was the best they have ever had. I didn't use any thyme simply because I did not have any and it was still great! Though, I did let the onions carmalize for about 45 minutes and let the soup simmer for a good hour and a half to infuse all the flavors. I also just tore off peices of bread and broiled them before putting them in the soup to give it a kind of rustic, home-made look. It's a very cozy soup for colder days!

I've had better. I had to add a lot to make this what I wanted to eat. An extra bay leaf, more wine, splash of brandy, and more spices. Definately not a 5 star-but a decent base. I'll keep looking-probably try Ina's next as she has never dissapointed.

I found this soup needing something. I will try another recipe with the addition of sherry next time.
