I have never liked squash or zucchini, but prepared this way it was delicious!! We chopped the squashes into bite-sized pieces and used chopped baby carrots (that's all we had and followed the rest of the recipe. Turned out so good - I will make it again!!

I did everything as instructed. i didn't have a mandoline slicer so i cut the vegetables in small bite sizes and it came out really delish. everyone in my family finished it.

I made this recipe along with the baked tilapia and it was delicious! I did not add the lime to my veggies . . . did not want overkill on the lime. I only used carrot and zucchini as I could not find yellow squash at the store. My husband loved it and so did I. I will definitely be recommending this recipe to my friends and family and making it again! Yummy!

This was the perfect healthy, quick dish I've made in a long time. My entire family loved it. I did modify the recipe by adding chopped garlic to the fish and it worked. Will make it again.

OK, SO IT HAS A LITTLE BUTTER IN IT. BUT IT IS A GREAT WAY TO GET THOSE VEGGIES ON THE TABLE!
