    Preparation couldn't have been easier.
Flavor was out of this world. Tomato Relish made the meatloaf. I'm going to look for other ways to use this tomato Relish. Next time I make it, I'll increase the amount of relish so there's more to serve on the side.

& the tomato relish is fantastic. Easy to make albeit a bit longer than the 20 minute prep time. Agree with other review to start with 2 eggs & consider if the 3rd is needed. Pairs nicely with a Beligian triple.

In our house, meatloaf has always been an experiment. Well, no longer. This is truly the "ultimate" Even my most finicky eater went back for seconds - and he doesn't eat anything where he can see peppers or onions. The flavors in the relish are delicious and the smoky flavor of the bacon really does cook through the meatloaf.

You could certainly use all ground beef. Watch your eggs - I automatically dumped in 3 but 2 would have been plenty.
