    This was a huge hit. The family called it a mexican pot pie. I will make it with pepper jack cheese next time, b/c we like the spice.

    I love the idea of this recipe and made these tonight with leftover pot roast. They turned out really great, BUT I did make adjustments for flavor. I sauted onions in butter before adding the beef to reheat. I added some water to moisten. I also added taco seasoning based on other reviews. This was a great idea and added a lot of flavor. They were really great, however, had I followed this recipe exactly it would have been incredibly dry and bland. That is why I only gave 2 stars. With the changes I made I will definitely make again. Great, new idea for leftover beef!

    Very bland and a bit dry. The use of the regular pie crust did not quite cut it for me. It was flat and did not have that nice flaky texture empanadas usually have. They sell empanada pastry in some supermarkets, sometimes in the freezer. Maybe thta would be better.

    I have made this twice and my family loves it. We will make this again. It's easy to make and delicious. What a great way to use left over beef!

    Everybody liked the general idea, but didn't love this recipe. The pie crust was too dominating and the beef was kind of dry. I'll try philo crust next time and add a bit of salsa to the beef to moisten.

    I thought this was a really clever way to use up leftover roast beef. It was very yummy, and I only made one slight modification. I took the shredded roast beef and put it in a small pot with about 1/3 pkg of taco seasoning and 1/3 cup water (add more seasoning if it needs it. I just simmered this for a couple minutes, to give the empanada's some more flavor. Other than that, I followed the recipe and it turned out great. I loved how simple and quick they were to make.

    This second meal from the series of beef roast is awesome. My kids and husband loved it! It is also a great concept to add to your repritoir, it can be used to make somosas and cornish pasties to name a few. Please do try this!

    This would have probably been alot easier if I could find already preapared "flaky" pie crusts...maybe I didn't look in the right place
