This is a fantastic soup! I was out of cayenne so I used Emeril's Essences instead. So glad I made extra so that I can freeze for later!

The sweet potato and the andouille sausage married in the same recipe for a soup - I wish I had thought of this combo. Creamy, a bit of spice with the roasted taste of the potatoes create a perfect flavor in every spoonful. Getting the sausage down to a crumbled state is the key - since andouille has a flavor all of its own, don't worry about using a slotted spoon and setting aside - the juices left in the pot do the job of keeping that rendered juice in the soup. Make this as directed - its perfect! My wife who does not eat sweet potatoes was "all in" on this one! Quick tip: Add a toasted, crusted bread or simple crostini for dunking!

This recipe is a keeper! I make it all the time - I usually have to add other things to suit my taste but this is perfect as is. It's the bomb on a cold rainy Portland night. I found that roasting the sweet potatoes during dinner the night before and then putting them fridge before bed and then pulling them out the next evening saves time. I then dream about the soup all day at work...

Wow this is awesome! Very easy to make but has a TON of flavor! I added crushed pepper and it was perfectly spicy! I also substituted coconut milk for the heavy cream. It was a perfect flavor combo! I will definitely make this again!

I have been making this soup for 2 years and everyone loves it!!! Even those who don't like sweet potatoes love it. The andouille is a key ingredient and shouldn't be substituted, as it changes the flavor completely.

Emeril is the best......all his recipes are so wonderful and delicious! I miss his live show that use to be on the food network.
I added corn bread muffins with sweet corn as a side with the soup.

i really didnt like the flavor combination in this soup, i dnt know if it was because i substituted with turkey sausage...it was ok i guess but not one of my fav :( i dnt think ill make this again

Another homerun for Emeril! I was looking for a new way to use up our bumper crop of sweet potatoes and this was delicious. I added the sausage back to the soup and served it with garlic cheese biscuits. FN seriously needs to bring back Emeril Live. I've never tried an Emeril recipe that wasn't fantastic.
