I made this for my family for Mother's Day. It was a big hit with my family, which is full of picky eaters. I used light sour cream instead, and kept it in the oven for about 50 minutes instead of an hour. It came out increadibly moist, and incredibly delicious. My mom told me it was the best cake I ever made for her. Next time, I think I will try making a simple glaze for the top, but it is wonderful as is. Thank you Paula for the wonderful recipe.

I made this for a meeting at the office. I did make the following changes to make a healthier cake:

    1. Used 1/2cup unsweetened applesauce instead of the oil.
    2. Used 1 whole egg and JustWhites Egg Beaters for the other 3 eggs.
    3. Used fat-free sour cream.
    4. Added about 1 TBSP cinnamon to the batter.
    5. Used 1 cup white sugar, 1 cup brown sugar, 5 TBSP cinnamon, and 2 cups finely chopped pecans for the cinnamon mix. Next time, I will only use half of this amount.

I baked the cake in a bundt pan instead of a tube pan. This was delicious! I even told people that it was healthier (on fat and cholesterol and they still devoured it. Now, the carb count is probably still high, but it's all worth it. I will definitely make this again.

We love the cake, my 13 year old daughter is the one that makes it for family dinners. However she has converted it to diabetic friendly so her uncle's can enjoy it also. but it is just as good

I made this last night and it was great! 1 hour was too long to leave it in though- tooke it out at 45min. I also made a simple glaze to go on top..yum yum.

I made a few subs: I didn't have pecans so I used walnuts, I also used egg beaters and fat free sour cream.
I baked it in a dark, non-stick bundt pan on 325 for 45 mins and it was perfect. Then when it came out I turned it onto my cake stand and drizzled it in a little icing, (confectioners sugar, vanilla, milk
    It was moist and delicious.

i took it to my job and i was the hit of the pot luck..... but i do have to confess i did add a splash of milk to the batter and a little bit of melted butter to the topping mixture because i thought it was a little to dry. But i still loved it
