I made this last night and enjoyed every bite..... had to cheat as I did not have heavy cream, but used milk and cornstarch to get the desired consistency.... It was fantastic !!!

This was an excellent soup, more of a stew, but nonetheless delicious. I agree with a couple of review-ers that there is too much italian seasoning in this recipe, but besides that I think it's pretty good! I had used chiken that I had already roasted with salt, pepper, and seasoned salt, which I think makes it a little more special than just using plain boiled chicken. I did not use the pie crust but have had chicken pot pie soup with the pie crust at a soup restaraunt and it is VERY good! I would recommend this soup for sure!

OMG, it it so delicious and easy to make. Made it last night and the family enjoyed it so much. And you get so much mileage with the chicken. I added a few more veggies than the recipe called for and it was a big pot.
Thanks AAron we love watching you and how far you have come.

This has become one of my "go to" recipes. Took to the office and cooked the pie crust in the toaster oven - cut in strips. Luckily I had enough for all and a customer saw it and requested the recipe. I love this and recommend it highly!

Proclaims it the best soup I've ever made. The pie crust thing...so simple but pure genius! Big love to Big Daddy!

Arron can cook, no frills no junk. This was a simple but yet great meal. There are some on the food network who are just not good in the kitchen but Arron McCargo is the best. This meal has been a hit with all my family and friends.

I made this on a cold, 10 degree night in Texas. What a hit. It was super comforting and yummy. I too adjusted the Italian Seasoning to 1 tsp and added garlic powder. I also had to add more salt than a pinch. Great recipe Aaron! Keep the coming.

I made this soup for my family last night and it was a hit! I added garlic (we love garlic in my family. It was easy to make and the crust is a nice compliment to the soup. I noticed, however the color of the soup in the picture is different from mine which was a creamy white. None-the-less this is a recipe that will definately be a go to for me!

    Thanks Aaron!

I've been following Chef McCargo Jr. since he appeared on The Next Food Network Star and have been watching his show from the beginning. The soup found it's way to our table shortly after the Belly Busters episode aired since my husband loves chicken pot pie. The expressions of delight were echoed around the table. Just recently I was looking in the fridge at left overs: half a rotisserie chicken and biscuits--ah! chicken pot pie soup! I used chicken stock to cook the potatoes, and went from there with the warmed up biscuits substituting for the pie crust. The version was just as well received as the original.

Thanks, Aaron. You give me different ways to look at ingredients and variations on dishes I make. Delightful!
