i followed the recipe to a T and we couldn't eat it because it was too salty and both of us love salt. So i must have had very salty ham hocks. Will try again with out salt added.

Made a few adjustments to make this Gluten Free. Used 1/4 coconut flour and 3/4 Gluten Free Flour Mix in place of 1 cup flour. I also added a little more celery and onion as I wanted to use it all up. The flavor was really good. My grocery store didn't have ham hocks at the time so I just bought a 2 lb ham and cut it up in to chunks. Being a busy mom this worked out to my advantage as I didn't need to cook it for the full time - although I am sure the flavor would have been richer if I had. Simmering for 1 hour worked great and the end product was DELICIOUS.

Fabulous! I added a tad more green pepper and onion, probably not necessary. It is not a cabbage soup. It DOES take all of the ingredients and create something new. It is a very thick, rich delicious soup unlike anything else. It is also easy on the time and budget. Thanks, Emeril!

I made this recipe yesterday and was dissapointed. The cabbage was added way to early, it also needs more celery and onion. I purchased some big hamhocks but they have very little meat on them. The final product was fatty and soupy even after skimming the fat as recommended. I followed the recipe exactly but it was no where near worth the three hours I put into it.

I've cooked Gumbo a number of times in the past and this recipe was not up to par. The cabbage turned into mush, barely discernable as an ingredient. I suggest the cabbage be added later in the process.
