Made this Saturday for my hubby...he LOVED it, said it was "restaurant" tasting. The potatoes were a bit mushy will have to work on that but the pistou was very tasty...put it in soup and over sliced Challah bread. Great recipe Ina!

Excellent & healthy. Didn't have saffron but will get some before I make it again. Pistou is not optional! It's excellent. I made 1/2 soup recipe and all the pistou. We spread it on boboli bread and baked with grated cheese and pine nuts. Wow! Husband raved!

Saffron threads are worth it! Great flavor. I, too, used only 1 tsp salt with a low sodium chicken broth, and it was perfect! Pistou is great on crackers, bread, or mixed in the soup! also great as a spread on a white pizza! (leftover from NYE. thanks Ina!

Overall this soup was very good. The broth was especially elegant. While there was nothing wrong with it, my family prefers a bit heartier soup.

My husband makes this soup with his homemade double chix broth and homemade pasta. Fabulous! It deserves 6 stars!

This soup was amazingly good, and quite addictive!

The only thing I would change next time is the amount of salt: I am not salt-sensitive, and this recipe has WAY too much salt for me. Next I will make sure I use low-sodium chicken broth AND 2 tsp + 1/4 tsp salt (half of Ina's recipe.

one word the best vegetable soup bar non! thank you Ina. I have made this a ton, and believe that the saffron is the secret ingredient to make it soo good! Woth the price. Trader joes has it for a fair price.

This soup is quite possibly the best I have ever had! Very elegant and tasty. I was going to make a salad with it, but it was so good, we ate it all by itsself. The only thing I did different was used vegetable broth to make it vegetarian. The broth was wonderful!

OMG Ina!!!! One of the best soups EVER! Added chicken apple sausage and a few chili flakes to spice it up but that pistou is incredible!!! 10's across the board!!
